Cooking with a World Class Chef
Restaurateur and celebrity chef Wilo Benet closed the doors of his original Pikayo Restaurant and re-created it at the beautiful Museum of Art of Puerto Rico. Twenty two tables in cream and soft blue are awash in lighting that changes softly and subtly. The Condé Nast Traveler for May 2001 included Pikayo on their list of the world’s top 100 new restaurants.
Wilo, a graduate of the Culinary Institute of America, was the youngest-ever executive in the island's Governor's Mansion and the first to bring Cajun cuisine to the island with such items as blackened fish and popcorn shrimp. At Pikayo's, he keeps up with the latest culinary trends: Martinis are served in oversized glasses; a cuivinet serves four wines by the glass.
Wilo changes his menu monthly. Following are some recent offerings: broiled lobster with a soursop beurre blanc and julienned chorizo; conch spring rolls with orange sofrito sauce; steamed cipollini on-ions and a foie gras terrine with truffle honey; cabbage stuffed with diced rabbit fricassee and raisins.
Pikayo's is a fresh fish-lover's dream come true, with its seared yellow fin tuna with onion escabeche, roasted cod with oven-dried tomatoes and fresh basil, and grilled salmon with Oriental black bean sauce all cooked to perfection. Within the past year, Wilo has also added his own renditions of typical Puerto Rican dishes to the menu. His mofongo (plantains stuffed with shrimp in saffron broth) and bistec (beef sautéed with onions) are sublime with arroz y habichuelas coloradas (white rice and red beans) and viandas (mashed tropical tubers) served on the side.
Days of Operation:
On Saturdays and Mondays only groups can join Wilo for a morning of classroom training kitchen exhibition in one of the most modern dream kitchens in the world. Normally closed on Saturdays and Mondays for lunch, the restaurant is theirs on a private basis through the end of their meal.

• Arrangements can be made to tour the art museum following lunch for a $6.00 admission fee.
Pricing:
Pricing for the morning classroom session including a mid-morning snack break as well as luncheon, including all applicable restaurant gratuities is $210.00 per person plus refreshments. (Pricing is sub-ject to change).
